UE : Food-based approaches for a healthy nutrition (« V2ASN »)
Goal and content
This UE aims to deliver basic skills on the foods and the used technological processes in the Southern countries; to initiate at the ways of improvement of feeding practices and of the nutritional quality of food ; offer a tailored approach taking in account the different contexts of Southern countries.
Are addressed :
- the different food strategies of improvement of the nutritional situations : diversification, fortification, biofortification.
- the main methods of characterization of the nutritional value of food used as part of V2ASN.
- the food importance, the traditional transformations and the nutritional value of main food groups met in the Southern countries.
- the food of the pregnant women, the infant and the young child : importance, recommandations, characteristics to impart to foods ; production and evaluation of improvement strategies.
- exemples of improvement strategies of the diet of others vulnerable groups.

Commentaries
Prerequisites: General nutrition, biochimestry and food technology notions.
The teachers are researchers and engineers of research institutes, a doctor-pediatrician and professionals in nutritional education.
